My go-to breakfast
Super easy, compact and batch bake ahead. I typically make these on Sunday afternoons for my week ahead. They really don’t have much of a recipe to follow but I have listed some of my favorite combinations.
Ham and Bell Pepper
Mushroom and Spinach
Bacon and Cheese
Spinach and Tomato
I prefer to use the mini muffin tin because the texture in the larger egg bites is just too chewy. In a bite size shape it’s just perfect.
I wisk eggs and poor into greased tin, sprinkle cheese option and then my toppings of choice.
Bake on center rack in oven at 375F for 7-9 minutes depending on oven.
Place in a ziploc bag bag with the day‘s date you made them and the flavor combination. You can freeze or place in the fridge. Use within 5 days in fridge.
